Season the roast with each of the Rub ingredients until all the surface is coated;
Place on a wire rack with a drip pan and allow to rest for at least 48 hours in the fridge;
Preheat smoker or grill at 275°; Preferred setup is with coals on each side of the roast for even browning;
Place the roast over indirect heat with a drip pan; Add your favorite wood and smoke at 275° for approx. 30 minutes per pound; Mop the whole roast with melted butter during cooking;
Pull the roast off at 130° for medium rare, 135° for a little more done; Wrap tight in foil and allow to rest 30 minutes before slicing – Finished temp depends on personal preference..The temp can rise about 5 more degrees once wrapped to rest; Use the drippings to make au jus or gravy while the roast is resting.
