Applewood Smoked Bacon Wrapped Tenderloin

Ingredients
- 1 Pork Tenderloin
- 1 lb - Quality Bacon
Rub
- 2 tbsp - Lemon Pepper
- 1 tbsp - Garilc Powder
Preparation
- Pre-heat grill to 300° setup for indirect cooking.
- Put together your bacon weave on a cutting board or clean surface.
- Season all sides of the pork tenderloin.
- Place your tenderloin on the edge of your bacon weave and roll it tightly,tucking the loose ends on the bottom side.
- Apply a little lemon pepper on top of the bacon.
- Place 2 applewood chunks on your hot coals.
- Place the tenderloin over indirect heat and cover your grill.
- Smoke around 30 to 60 minutes depending on the size of your pork tenderloin.
- We are looking to finish this cut at 145° internal temperature.
- Allow to rest 15 minutes before slicing and serving.
