Apple Pie Shine

Ingredients
- 1 ¼ -Gallons apple juice
- 1 -Gallon apple cider
- 2 -750 ml 190 proof Everclear
- 1 -750 ml 80 proof spiced rum
- 2 -Cups Dark brown sugar
- 2 -Cups White sugar
- 12 -Cinnamon sticks
- 12 - quart size jars
Preparation
- Add apple juice and apple cider to a large 4 gallon stockpot.
- Bring to a slow simmer.Add sugars and simmer until all sugars are dissolved,about 15 to 30 minutes.
- While heating up the mixture prepare your mason jars and add a cinnamon stick to each one.
- Remove from heat and allow to cool to room temperature.(Do Not Add Alcohol Until It Is Cooled Off).Alcohol will evaporate if it’s added before it cools off.
- Now pour all the alcohol in the pot and stir well for several minutes.
- Use a funnel and a ladle to fill all your jars leaving 1/4 inch headspace.
- Refrigerate and shake each jar every few days for two weeks.
Notes:
Aging two weeks will allow the cinnamon to naturally infuse into each jar..
Open a jar,sit back and enjoy every sip.
