Cherry Smoked Pulled Buffalo Chicken With Ranch Slaw

Ingredients
- 10 Chicken thighs
- 1 ½ cup - Buffalo sauce
- ½ cup - Bbq rub
Ranch Slaw
- 3 cup - Coleslaw mix
- ¼ cup - Ranch dressing
- 2 tbsp - Mayo
- 1 ½ tsp - Sugar
- ¼ tsp - Lemon juice
Preparation
- Preheat smoker to 325°.
- Rub chicken under the skin on all sides with your favorite rub.
- Add 3 chunks of cherry wood to the hot coals.
- Place thighs over indirect heat & smoke until they reach 180° internal temperature.
- Remove chicken,remove & discard skin & bones.
- Use two forks to shred the chicken.
- Place shredded chicken in a slow cooker,add the 1-1/2 cup of buffalo sauce.
- Cook chicken on high,mixing and shredding it until it’s finely shredded.(1 to 2 hours after the slow cooker is hot).
- Meanwhile mix the slaw ingredients & allow the slaw to chill for at least an hour.
- Serve chicken on toasted buns with slaw and extra buffalo sauce.
Notes:You can also use boneless,skinless thighs for less work,but it will tend to dry out easier on the smoker.
