Cherry Smoked Pulled Buffalo Chicken With Ranch Slaw

Ranch Slaw

Preparation

  1. Preheat smoker to 325°.
  2. Rub chicken under the skin on all sides with your favorite rub.
  3. Add 3 chunks of cherry wood to the hot coals.
  4. Place thighs over indirect heat & smoke until they reach 180° internal temperature.
  5. Remove chicken,remove & discard skin & bones.
  6. Use two forks to shred the chicken.
  7. Place shredded chicken in a slow cooker,add the 1-1/2 cup of buffalo sauce.
  8. Cook chicken on high,mixing and shredding it until it’s finely shredded.(1 to 2 hours after the slow cooker is hot).
  9. Meanwhile mix the slaw ingredients & allow the slaw to chill for at least an hour.
  10. Serve chicken on toasted buns with slaw and extra buffalo sauce.

Notes:You can also use boneless,skinless thighs for less work,but it will tend to dry out easier on the smoker.
