Hot & Sweet Apricot Spare Ribs

Ingredients
- Two racks of trimmed spare ribs
- 1 Beer
Rub
- 5 tsp - Kosher Salt
- 1 ¼ tsp - Cayenne Pepper
- ½ tsp - Onion Powder
- ½ tsp - Garlic Powder
- ½ tbsp - Coarse Black Pepper
- 2 tbsp - Cane Sugar
- 2 tbsp - Brown Sugar
- 2 tbsp - Smoked Paprika
Apricot Sauce
- ½ cup - Ketchup
- 1 tbsp - Worcestershire Sauce
- 1 tsp - Onion Powder
- 1 tsp - Garlic Powder
- ¼ cup - Honey
- 2 tbsp - Red Cooking Wine
- ¼ cup - Apricot Preserves
- 1 tsp - Cayenne Pepper
- 2 tbsp - Brown Sugar
Preparation
Apricot Sauce
- Mix sauce ingredients in a small saucepan.
- Bring to a simmer over medium heat.
- Stir and simmer 10 minutes or until all ingredients are well incorporated and sauce is smooth.
- Remove from heat and sit aside.
Ribs
- Pre-heat smoker to 275°F.
- Remove membrane from the back of the ribs.
- Apply your rub generously to both sides of the ribs.
- Allow ribs to rest for 15 minutes.
- Place ribs on the smoker,add 2 cherry chunks and spritz lightly with beer.
- Smoke ribs 3 hours,spritzing with beer every hour.
- At 3 hours lay foil over the ribs loosely,but do not wrap them.
- Continue to cook 2 more hours.
- At 5 hours check the ribs for tenderness.
- When they have reached your desired tenderness,baste with your apricot bbq sauce and cook for an additional 30 minutes.
