Loaded Potato Soup

Ingredients
- 1 lb - Bacon
- 1 can - Cheddar cheese soup
- 8 oz - Sour cream
- 2 cup - Sharp cheddar cheese
- 2 lb - Frozen diced potatoes
- 32 oz - Chicken stock
- 1 cup - Milk
- 1 ½ cup - Diced onions
- 1 cup - Diced green onions
- 1 tsp - Coarse black pepper
Preparation
- Cook bacon in a 4 quart dutch oven,remove all grease except 2 tablespoons.
- Dice onions & saute all but half of the green onions for 10 minutes.
- Add potatoes,pepper & chicken stock,bring to a boil.Cook potatoes until they mash easily.
- Crumble half of the bacon & add it to the soup.
- Add 1 cup of milk.
- Add the can of cheddar cheese soup.
- Add one cup of sharp cheddar.
- Add sour cream,stir well.
- Use the back of a wooden spoon or a potato masher to mash about half of the potatoes..Stir until well blended.
- Bring to a slow simmer and cook until slightly bubbling.
Serve hot.
Top with cheddar cheese,bacon and green onions.
