Spicy White Chicken Chili

Ingredients
- 1 lb - Boneless skinless chicken breast(cut into 1 inch cubes)
- 1 ½ tsp - Garlic powder
- 1 Minced garlic clove
- 1 tbsp - Vegetable oil
- 3 can - 15.5 oz.great northern beans
- 16 oz - Chicken broth
- 2 can - 4 oz each green chilies
- 1 tsp - Salt
- 2 tbsp - Ground cumin
- 1 tsp - Dried oregano
- ½ tsp - Ground black pepper
- 1 tsp - Cayenne pepper
- 1 cup - Sour cream
- 2 Jalapeno peppers (diced)
- 2 cup - Extra sharp shredded cheddar cheese
- 1 tsp - Cajun seasoning
Preparation
- In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink.
- Add the beans, broth,chilies and seasonings.
- Bring to a boil.
- Reduce heat; simmer,uncovered, for 60 minutes.
- Remove from the heat; stir in sour cream.
- Top with cheddar cheese & Serve with warm cornbread.
Notes:
Smoked Pulled Chicken thighs are also great used in this recipe.
